Since becoming dairy free the one thing I miss the most, oh apart from creamy desserts, is, oh and buttery pastries, is, did I mention ice-cream?… is CHEESEEEEE!!! I would eat a plate of cheese quite happily and that would be my go-to when ordering from the dessert menu at any restaurant…. but these days no cheese for me 🙁 I have tried store bought dairy free cheeses and they really aren’t great so I thought I would try making my own.
The combination of ingredients makes for a flavoursome cheese which can be eaten with crackers, smeared on toast or even mixed through your favourite pasta… I like it!
Most ingredients are easy to find, many of you will already have these in your pantry, there’s nothing too weird about this recipe. If you want the finished cheese to have more of a yellowy colour just add a pinch of tumeric. There is something so comforting just knowing you can indulge in cheese and crackers without having to miss out on these simple pleasures in life. This is how it’s done…
VEGAN CHEESE
In a food processor or a blender add ½ cup natural cashews that have been soaked in warm water for 30 minutes and drained
1 tsp of each dried basil, dried oregano, salt, lemon juice and maple syrup
½ tsp minced garlic or garlic powder
1 ½ tsp corn flour
3 tblsp nutritional yeast
½ cup water
Blend for about 3 – 5 minutes until smooth
In a saucepan add ½ cup water and 1 ½ tsp agar agar, stir, then add in the cashew mix and bring to boil, stirring constantly, until thick
Grease a ramekin, fill with mixture and chill for at least an hour or overnight
SALTY SEEDED CRACKERS
Pre heat oven to 150C and line 2 baking trays with baking paper
In a bowl combine 1/3 cup of each coconut flour, flax seed, pepitas, seseme seeds, sunflower seeds
1 tblsp ground psyllium husks
1 tsp sea salt
Then add 1 cup boiling water and ¼ cup melted coconut oil
Mix to combine
Roll out very thin onto the prepared trays
You can sprinkle with more sea salt if you want them super salty
Bake for approx. 35 – 45 minutes, then let cool, break into pieces and enjoy with your vegan cheese
